Research published in Lo Squaderno: ‘The Sensorial as Infrastructure’

As part of our Urban Backstages research, Andrea Cetrulo, John Bingham-Hall and Elahe Karimnia have written an article for the latest issue of Lo Squaderno, dedicated to urban recipes.

The piece, entitled The Sensorial as Infrastructure, borrows the recipe for pandebono — a traditional Colombian pastry — from café owners at the Elephant and Castle railway arches, and uses it as a point of departure to reveal the underlying infrastructures of emotional and material support surrounding its production and circulation. The café is in Maldonado Walk, a predominantly Latin American stretch in the railway arches that has been internally subdivided into micro shopping malls with a mix of services and retail. The article can be read on the online journal here [PDF].
